Grilled Shrimp Skewers with Mango Salsa
Ingredients:
1 pound of raw shrimp, peeled and deveined
2 cloves of garlic, minced
1 tablespoon of olive oil
1 tablespoon of honey
1 tablespoon of smoked paprika
Salt and pepper
2 ripe mangoes, peeled and diced
1/2 red onion, diced
1/2 jalapeño pepper, seeded and minced
2 tablespoons of lime juice
2 tablespoons of fresh cilantro, chopped
Grocery List:
Raw shrimp
Garlic
Olive oil
Honey
Smoked paprika
Salt and pepper
Mangoes
Red onion
Jalapeño pepper
Lime
Fresh cilantro
Instructions:
Preheat the grill to medium-high heat.
In a small bowl, whisk together the minced garlic, olive oil, honey, smoked paprika, salt, and pepper.
Thread the peeled and deveined shrimp onto skewers and brush them with the garlic-honey mixture.
Grill the shrimp skewers for 2-3 minutes per side, or until they are cooked through and opaque.
While the shrimp is grilling, prepare the mango salsa. In a medium bowl, combine the diced mango, red onion, jalapeño pepper, lime juice, and cilantro. Season with salt and pepper to taste.
Once the shrimp skewers are done, remove them from the grill and let them rest for a few minutes.
Serve the grilled shrimp skewers hot with the mango salsa on the side.
